White Wine Fish Bouillon


  1. your favorite fish
  2. one pint of water
  3. one quart of white wine
  4. one tablespoonful of butter
  5. a bunch of parsley
  6. bunch of thyme
  7. a bay-leaf
  8. a carrot
  9. a blade of mace
  10. half a bay-leaf
  11. four cloves
  12. two sprigs of parsley


One pint of water, one quart of white wine, one tablespoonful of butter, a bunch of parsley, four young onions, a clove of garlic, a
bunch of thyme, a bay-leaf, a carrot, and a blade of mace. Bring to the boil and let cool thoroughly before cooking the fish in it.
